A high-rise kitchen is its own repair problem

We repair Sub-Zero built-in refrigeration downtown, which in practice means we work vertically: the towers in Core-Columbia and along the Marina, the loft conversions in the East Village and the Gaslamp Quarter, the older houses in Sherman Heights, and the buildings stacked along India Street in Little Italy.

A downtown kitchen is not a suburban kitchen with less floor area. It sits in the interior of the floor plan, usually with no window and no exterior wall, and the refrigerator has to reject its heat through a grille into the same closed room it is cooling. The equipment mix follows the same logic: integrated columns instead of a wide side-by-side, refrigerator and freezer drawers under the counter, a wine cabinet standing in for a cellar nobody has, and an ice machine behind the bar because there is no room for one in a door. Every one of those units is built into millwork and has to be diagnosed where it stands.

That changes the order we work in. On a house call the condenser is a footnote. Here it is the first thing we open, because a coil that has taken a season of lint from the laundry closet next to it, in a room with nowhere to send heat, will hold a refrigerator a few degrees warm all afternoon and let it recover overnight. A good share of the faults described to us as intermittent downtown are exactly that, and they are a cleaning rather than a repair.
