Downtown kitchens are specified as a package, refrigeration and cooking chosen together by a builder or a remodeler, and they tend to reach us that way too.
The mix in a tower is settled by the floor plan long before anyone picks a brand. There is no wall for a 48 inch side-by-side and, on most interior units, nowhere to duct a hood to the outside. So what goes in is refrigeration in columns, a refrigerator or freezer drawer under the counter, a wine cabinet doing the job a cellar does in a house, and an ice machine behind the bar. Cooking is a 30 or 36 inch range or a cooktop, frequently under a hood that recirculates, which leaves more heat in a small closed room than the same appliance would ever produce in a suburban kitchen.
Sub-Zero is what we open most often, and here almost every one of those calls begins at the grille, because a condenser in an interior kitchen has nowhere to send its heat. Wolf is cooking equipment only, ranges, rangetops, wall ovens and cooktops, and the repeat jobs are ignition faults and a temperature sensor that has drifted while the control obeys it faithfully. Viking arrives as both a range and, in some of these residences, refrigeration, with the wear landing on igniters, oven thermostats and heavy door hardware. Thermador carries the most electronics of the four, so a code names a component and we test that component before anyone orders it. Cove is the dishwasher of the group and turns up alongside Sub-Zero in the newer kitchens.

Our wine cabinet stands out in the living space against the glass and it was losing a few degrees every afternoon while the panel still read what I set. He measured down at the bottles, cleared the grille where it was breathing into the island, remeasured. No part, and he said so plainly.
Water on the floor of the loft and all I could think about was the ceiling of the unit under us. Same day, defrost drain iced shut, flushed it and checked the heater. Nothing got past the towels.
Frost came back on the rear wall of the freezer column about a week after I scraped it all off. We are two blocks from the water and he said the damp air coming in every time the door opens makes it show up much faster here. Heater and a thermistor.
